Our sourdough begins with living starters we’ve fed every day for years — bubbling, sour-sweet, and quietly alive. There are no shortcuts and no improvers. Just flour, water, salt, time, and a baker who knows when the dough is ready.
Right now we’re baking with British strawberries and the first of the stone fruit — berry brioche, ricotta cakes still warm, and iced matcha for the walk home.
